Peanut Butter Chocolate Chip Oatmeal Breakfast Bars
Ingredients:
• 2 tablespoons ground flaxseed
• 5 tablespoons water
• 1½ cups gluten-free rolled oats
• ½ cup gluten-free oat flour
• ½ cup unsweetened shredded coconut
• 1 teaspoon ground cinnamon
• ½ teaspoon baking powder
• ¼ teaspoon baking soda
• ¼ teaspoon salt
• ½ cup natural peanut butter
• ¼ cup melted coconut oil
• ½ cup coconut sugar
• 1 teaspoon vanilla extract
• ½ cup vegan chocolate chips
• ¼ cup chopped walnuts (optional)
Directions:
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper
- In a small bowl, combine ground flaxseed and water to make flax eggs. Let sit for 5–10 minutes to thicken
- In a large bowl, whisk together oats, oat flour, shredded coconut, cinnamon, baking powder, baking soda, and salt
- In another bowl, mix peanut butter, melted coconut oil, coconut sugar, vanilla extract, and prepared flax eggs until smooth
- Pour the wet mixture into the dry ingredients and stir until well combined
- Fold in chocolate chips and chopped walnuts if using
- Transfer the batter to the prepared pan, spreading it evenly
- Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean
- Allow to cool completely in the pan before slicing into bars
