Vegan Breakfast Bars – Gluten Free Oatmeal Bars

Peanut Butter Chocolate Chip Oatmeal Breakfast Bars

Ingredients:


• 2 tablespoons ground flaxseed
• 5 tablespoons water
• 1½ cups gluten-free rolled oats
• ½ cup gluten-free oat flour
• ½ cup unsweetened shredded coconut
• 1 teaspoon ground cinnamon
• ½ teaspoon baking powder
• ¼ teaspoon baking soda
• ¼ teaspoon salt
• ½ cup natural peanut butter
• ¼ cup melted coconut oil
• ½ cup coconut sugar
• 1 teaspoon vanilla extract
• ½ cup vegan chocolate chips
• ¼ cup chopped walnuts (optional)

Directions:

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper
  2. In a small bowl, combine ground flaxseed and water to make flax eggs. Let sit for 5–10 minutes to thicken
  3. In a large bowl, whisk together oats, oat flour, shredded coconut, cinnamon, baking powder, baking soda, and salt
  4. In another bowl, mix peanut butter, melted coconut oil, coconut sugar, vanilla extract, and prepared flax eggs until smooth
  5. Pour the wet mixture into the dry ingredients and stir until well combined
  6. Fold in chocolate chips and chopped walnuts if using
  7. Transfer the batter to the prepared pan, spreading it evenly
  8. Bake for 20–25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean
  9. Allow to cool completely in the pan before slicing into bars
