Peanut Butter Bars for Two
Ingredients:
• ¼ cup natural creamy peanut butter
• 1 tablespoon maple syrup
• 2 tablespoons coconut flour
• ¼ cup chocolate chips
• 1 tablespoon peanut butter (for topping)
Directions:
- Line a mini loaf pan or small rectangular container with parchment or wax paper
- In a small bowl, mix ¼ cup peanut butter, maple syrup, and coconut flour until a thick dough forms
- Press the peanut butter mixture evenly into the prepared pan
- In a separate bowl, melt chocolate chips and 1 tablespoon peanut butter together until smooth
- Pour the chocolate mixture over the peanut butter layer and smooth the top
- Freeze until firm, about 30 minutes
- Once set, remove from the pan and slice into two bars using a sharp knife
