In a mason jar or medium bowl, combine rolled oats, chia seeds (if using), maple syrup, peanut butter, almond milk, vanilla extract, and a pinch of salt.
Stir well until the peanut butter is fully incorporated and the mixture is evenly blended.
Cover and refrigerate for at least 4 hours, preferably overnight, to allow oats to absorb the liquid and thicken.
In the morning, give the oats a good stir. Add a splash of milk if a thinner consistency is desired.
Top with your favorite toppings such as sliced banana, a drizzle of peanut butter, or a sprinkle of chocolate chips before serving.
