Mint Chocolate Chip Overnight Oats
Ingredients:
• 1 cup rolled oats
• 1 tablespoon chia seeds
• 2 tablespoons raw cacao powder
• 1 cup milk of choice (e.g., almond, oat, or dairy)
• ¼ cup coconut cream or yogurt
• ½ teaspoon vanilla extract
• ¼ teaspoon peppermint extract
• 2 tablespoons maple syrup
• 2 tablespoons mini chocolate chips
Directions:
- In a mixing bowl, combine rolled oats, chia seeds, and raw cacao powder
- Add milk, coconut cream or yogurt, vanilla extract, peppermint extract, and maple syrup to the dry ingredients
- Whisk the mixture until well combined and smooth
- Fold in mini chocolate chips
- Divide the mixture evenly into 2–3 jars or containers with lids
- Seal and refrigerate overnight, or for at least 4 hours
- Before serving, stir the oats and add additional toppings if desired
