Mint Chocolate Chip Overnight Oats


Ingredients:


• 1 cup rolled oats
• 1 tablespoon chia seeds
• 2 tablespoons raw cacao powder
• 1 cup milk of choice (e.g., almond, oat, or dairy)
• ¼ cup coconut cream or yogurt
• ½ teaspoon vanilla extract
• ¼ teaspoon peppermint extract
• 2 tablespoons maple syrup
• 2 tablespoons mini chocolate chips

Directions:

  1. In a mixing bowl, combine rolled oats, chia seeds, and raw cacao powder
  2. Add milk, coconut cream or yogurt, vanilla extract, peppermint extract, and maple syrup to the dry ingredients
  3. Whisk the mixture until well combined and smooth
  4. Fold in mini chocolate chips
  5. Divide the mixture evenly into 2–3 jars or containers with lids
  6. Seal and refrigerate overnight, or for at least 4 hours
  7. Before serving, stir the oats and add additional toppings if desired
