Vegan Cinnamon Cookies
Ingredients:
- 1 cup natural almond butter (or any natural nut butter)
- ½ cup coconut sugar
- ¼ cup pure maple syrup
- 1 tablespoon ground cinnamon
- 1 teaspoon vanilla extract
- ¼ teaspoon fine sea salt
- ½ teaspoon baking soda
- ¼ cup oat flour
Directions:
- Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper.
- In a large bowl, mix almond butter, coconut sugar, maple syrup, cinnamon, vanilla extract, and salt until smooth and well combined.
- Add in baking soda and oat flour. Stir until a dough forms.
- Scoop dough using a tablespoon or cookie scoop and roll into balls. Place on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball with a fork or your palm.
- Bake for 8–10 minutes, or until edges are slightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
