Mediterranean Savory Oatmeal Bowl


Ingredients:


• 1 tablespoon extra virgin olive oil
• ½ small onion, finely chopped
• 1 small sweet potato, peeled and diced
• Kosher salt and freshly ground black pepper, to taste
• 1 cup quick-cooking steel-cut oats
• 2 large eggs
• 1 ripe avocado, sliced
• ½ cup cherry tomatoes, halved
• ¼ cup crumbled feta cheese
• 1 tablespoon chopped fresh parsley
• ½ teaspoon za’atar seasoning

Directions:

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and diced sweet potato. Season with salt and pepper. Cook, stirring occasionally, until sweet potatoes are tender and lightly browned, about 10 minutes
  2. Meanwhile, cook oats according to package instructions. Once cooked, season with salt and pepper to taste
  3. In a separate pan, cook eggs to your preference (fried, poached, or scrambled)
  4. To assemble, divide cooked oats between two bowls. Top each with sautéed sweet potatoes and onions, a cooked egg, sliced avocado, cherry tomatoes, and crumbled feta
  5. Garnish with chopped parsley and a sprinkle of za’atar seasoning. Serve immediately
