Mediterranean Savory Oatmeal Bowl
Ingredients:
• 1 tablespoon extra virgin olive oil
• ½ small onion, finely chopped
• 1 small sweet potato, peeled and diced
• Kosher salt and freshly ground black pepper, to taste
• 1 cup quick-cooking steel-cut oats
• 2 large eggs
• 1 ripe avocado, sliced
• ½ cup cherry tomatoes, halved
• ¼ cup crumbled feta cheese
• 1 tablespoon chopped fresh parsley
• ½ teaspoon za’atar seasoning
Directions:
- Heat olive oil in a skillet over medium heat. Add chopped onion and diced sweet potato. Season with salt and pepper. Cook, stirring occasionally, until sweet potatoes are tender and lightly browned, about 10 minutes
- Meanwhile, cook oats according to package instructions. Once cooked, season with salt and pepper to taste
- In a separate pan, cook eggs to your preference (fried, poached, or scrambled)
- To assemble, divide cooked oats between two bowls. Top each with sautéed sweet potatoes and onions, a cooked egg, sliced avocado, cherry tomatoes, and crumbled feta
- Garnish with chopped parsley and a sprinkle of za’atar seasoning. Serve immediately
