Vegan Cinnamon Cookies

Ingredients:

  • 1 cup natural almond butter (or any natural nut butter)
  • ½ cup coconut sugar
  • ¼ cup pure maple syrup
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • ¼ cup oat flour

Directions:

  1. Preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix almond butter, coconut sugar, maple syrup, cinnamon, vanilla extract, and salt until smooth and well combined.
  3. Add in baking soda and oat flour. Stir until a dough forms.
  4. Scoop dough using a tablespoon or cookie scoop and roll into balls. Place on the prepared baking sheet, spacing them about 2 inches apart.
  5. Gently flatten each ball with a fork or your palm.
  6. Bake for 8–10 minutes, or until edges are slightly golden.
  7. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
