if a ginger molasses cookie and an oatmeal cookie had a baby, you’d get these incredible gingerbread oatmeal cream pies with vanilla frosting 😍 these one of my fav cookies on the blog! they’re chewy and full of deep flavor from molasses and warm spices, which is perfectly balanced by the sweet vanilla cream filling.⠀
